lemoney sponge layer cake, with lemon curd, passionfruit & lemon zest buttercream filling. my mum ( who swears she hates lemons... ) loved it. did we mention it had lemons in...?
light, crumbly, melt-in-the-mouth-buttery and filled with zingy passionfruit buttercream, these little biscuits are seriously addictive.
you will need: for the biscuits: 200g soft butter, 200g icing sugar, 200g plain flour, 200g cornflour. for the filling: 250g butter, 250g icing sugar, pulp & juice of two passionfruit
pre-heat the oven to 160ª. beat the butter & icing sugar until pale and fluffy, add the plain flour and cornflour, mix slowly until it all comes together. roll the dough into little balls about the size of a cherry tomato, place onto a baking sheet a couple of inches apart and flatten slightly with a fork. bake for approx 12-15 mins or until the biscuits are lightly golden. remove from oven and leave to cool on a wire rack. whilst they are cooling, make the filling by beating the butter and icing sugar together until very pale & fluffy. add the passion fruit pulp & juice and mix again. spread a teaspoon of the buttercream on the flat side of half the biscuits and gently press them together with the un-iced halves.
christmas pudding club
huge thank you to everyone who made it to our very merry christmas pudding club. never have i seen such a marvellous collection of pinnies in my life ! 55 scrumptious christmas puddings were made and at least half of those had very special silver pudding charms hidden inside. my puddings ( including one sad unclaimed pud we found on the side - did anyone really manage to drink so much christmas spirit they forgot their actual pudding ? oh hang on... ) are now happily steaming away in the oven and the house smells extremely christmassy indeed. please do send us a photo of your pudding in action on christmas day, bonus points if you're in it wearing your best christmas jumper
and thank you sophie saunders for these great photos x
